Fluffy Sweet Potato and Coconut Cups

From my book, Wellness for Women

· 4 Baked Sweet Potatoes Or Yams
· 1 Cup Pure Coconut Milk
· ½ Cup Shredded Coconut
· 1 Tablespoon Pure Vanilla
· ¼ Teaspoon Nutmeg
· 1 Tablespoon Chopped Organic Pecans

·Directions:

Scoop cooked sweet potato or yam out of their skins and transfer to a large mixing bowl. Beat with an electric mixer, adding coconut milk a little at a time until light and fluffy. Beat in shredded coconut, vanilla and nutmeg. Scoop into individual dessert cups and sprinkle pecans on top. Serve warm or chilled. (Makes about 6 servings.)
